FOR CHEESE JAMS
PEPPERED BLACK MISSION FIG PRESERVE - Recommended cheeses: Blue cheese, from Cambazola to Stilton. This preserve combines the rich texture and taste of figs with lemon, thyme and a little kick of pepper. These flavor combinations are a perfect foil to blue cheese, especially strong ones.
SOUR CHERRY WITH LEMON BALM PRESERVE - Recommended chesses: All goat cheese, young and old, and triple creams. The tartness of sour cherries combined with the herbal citrus of lemon balm is fabulous in this whole fruit, not too sweet preserve.
SPICED QUINCE PRESERVE - Recommended cheeses: Manchego, parmesan, Old cheddar, other firm cheeses. Although quince can be hard to work with straight off the tree, this quince preserve is well balanced with the perfect amount of aromatic spices. Your cheese will be lonely without it!
PURPLE BASIL JELLY- Recommended Cheeses: Triple cream, 3 year old cheddar - Raw milk, parmigiano reggiano. This jelly provides both vibrant color and great basil taste. It's not too sweet citrus base mak4s it perfect for any part of a meal. Can be used as a glaze for cheesecakes and cheese tarts.
GOLDEN RASPBERRY JAM - Recommended cheeses: All ages of goat milk cheese, from young (Valencay) to aged (Chaput), Monterey Jack, Mozzarella. This tart and delicious jam can be a great accompaniment to any goat cheese, depending on personal taste. It's bright color makes it the perfect quick and easy garnish to the simple yet always appropriate cheese and cracker. Combine with mascarpone with any dessert.
